BLUEBERRY NUTTY FLAPJACKS
Want a healthy option for breakfast or snack on the go? Try these Blueberry nutty flapjacks. Very easy to make and delicious as well as nutritious. Made with no refined sugar, if you use date nectar and with lots of nuts and oats and fresh blueberries. Can be gluten free just substitute flour for gluten free flour and oats. If you want vegan option just replace the butter with nondairy spread like soy margarine or even coconut oil.
- 225g Organic Oats( gluten free if required)
- 200g mixed nuts( coarsely ground) I used pecans, brazil, walnuts and almonds
- 50g fine ground almonds
- 100g plain organic flour( gluten free if required)
- 4 tbsp date nectar ( or 100g soft brown sugar )
- 5 tbsp honey
- 180g organic butter
- 200g blueberries
Simply put nuts, flour and oats in a large bowl. Melt the butter gently in a pan with the honey and date nectar( or sugar if using). Pour onto oats and stir until combined. spoon half out onto a baking tray then scatter the blueberries on and then dot the rest of the mixture loosely over the top and pat down gently. Bake in 180 c or gas 4 oven for about half an hour until golden brown. Leave to cool then slice. Enjoy!
