NUTTY DATE FLAPJACKS
Today’s experiment for simple healthy nutritious breakfast/ on the go snacks! Date and orange nutty flapjacks. Made with no refined sugar, only honey and date nectar, lots of nuts and oats and only small amount of flour. So easy gluten free option if you replace flour with gluten free flour. To make vegan version simply swap butter for dairy free spread like soya margarine.
Date and Orange Flapjack Recipe
- 220g rolled oats
- 200g mixed nuts coarsely ground
- 50g ground almonds
- 75g flour
- 180g butter
- 5 tbsp honey
- 4tbsp date nectar.
- Date filling, 250g pitted dates, 1 large orange,( zested and juiced)
To make filling, put zest and juice in a pot with the dates and simmer gently until can mix into a thick soft paste. Remove from heat.
Simply melt butter in a pot gently with honey and date nectar. In a large bowl mix all dry ingredients and then add the butter/ honey mixture, stir well.Spread just over half of mixture on baking tray lined with baking parchment, then spread the date filling over whole surface and cover loosely with the rest of oat/nut mix.
Bake in 180C /gas 4 oven for about 25 minutes until rich golden brown, cool and enjoy! Great for energy boost after a workout!
