Pea. Spinach and coconut milk soup

Pea and Spinach Soup recipe:

  • 3 leeks, chopped
  • 1 large potato, chopped
  • 200 g frozen petis pois
  • Bag of fresh spinach
  • Bunch of flat parsley, chopped
  • Organic vegetable stock (500ml)
  • Can of coconut milk
  • 1 lime juiced with bits
  • Garlic clove, red chilli flakes , Salt & black pepper to flavour

Gently fry leeks until soft in a little oil, then add potato and stock. Cook until potato is soft then add the peas and garlic and chilli. Simmer low for 4 mins then add spinach and parsley, lime and coconut milk. Turn heat off when it simmers lightly. Then whizz and enjoy!
