Gluten free apple cake

To celebrate achieving 400 likes on my facebook page I think we can indulge in some delicious Swedish Apple cake that is gluten free and actually very nutritious and darn tasty! Made with organic apples, almonds, milled flaxseed and organic butter and eggs. My recipe is really easy to make and the cake is light and moist I make two small ones from this amount but you can make one large one (8inch tin) and just bake for longer.

Gluten Free Swedish Apple Cake:

  • 175g organic butter
  • 4 organic eggs
  • 175g soft brown sugar
  • 125g ground almonds
  • 75g mixed flaxseed
  • 50g corn flour
  • 1.5 tsp baking powder
  • 1.5tsp ground cinnamon
  • 250g organic apples
  • Topping: slices of apple and flaked almonds

To make simply whisk the eggs with the sugar in a large bowl until light and fluffy. Melt the butter gently. Peel, slice and cube the apples keeping a few thin slices to decorate the top. Add all other ingredients including butter except the apples to the egg mixture and whisk until light and fluffy. Stir in the apple chunks and then pour mixture into two high sided 6in cake tins and top with apple slices and sprinkling of flaked almonds and light dusting of cinnamon. Bake for approx. 30 mins at 180c/gas 4 . Ready when golden brown and a skewer comes out clean of cake mixture! Enjoy and let me know how you get on!
