Easter apricot and dark chocolate almond cake ( dairy free)

This cake is very easy to make and is adaptable for flavours and additions as you prefer! I make it a gluten free version as it has so many ground almonds in anyway instead of flour.Coconut butter is a healthy alternative to butter so that it is a dairy free cake too!

Dairy Free Apricot and dark chocolate Cake:

  • 175g coconut butter
  • 4 organic eggs
  • 175g soft brown sugar
  • 125g ground almonds
  • 100g gluten free flour
  • 1.5 tsp baking powder
  • 100g chopped apricots
  • 50g mixed candied orange and lemon peel
  • 100g organic dark chocolate, chopped into small bits ( at least 70%)
  • Topping: flaked almonds

To make simply whisk the eggs with the sugar in a large bowl until light and fluffy. Melt the coconut butter gently. Chop the apricots and dark chocolate into small pieces. Add all other ingredients including butter except the apricots, peel and chocolate to the egg mixture and whisk until light and fluffy. Stir in the apricots,chocolate and peel gently  and then pour mixture into two high sided 6in cake tins and top with a sprinkling of flaked almonds. Bake for approx. 30 mins at 180c/gas 4 . Ready when golden brown and a skewer comes out clean of cake mixture! Enjoy and let me know how you get on!
